Which type of rice is it that scoops nicely into bowls at Chinese restaurants?
I steam ordinary chinese rice (Mr Goudas) but, for some reason it doesn't tamp down like in the restaurants so that you can pick it up in clumps with your chopsticks.
I'm NOT talking about the glutinous rice either, because that's WAY too sticky.
What type of rice is it that I need to get though, that holds together a bit?
P.S. yes of course I own an authentic chinese rice-steamer and all the rice I make is always steamed!
But for some reason it's just never as 'clingy' as in the restaurants; this is my problem.
And YES I'm using the cooker properly - I was just told that I need a different type of rice, and I need to know which one!!
My Chinese boyfriend buys Thai jasmine rice; it's nice and sticky. Make sure you rinse the rice well with cold water or it won't get as nice of a sticky coating. Just put it in the steamer and measure the water carefully, presto, it's done!
